Pound cake (well, actually half-pound cake)
Butter - 2 sticks or half pound (softened)
Sugar - 1 cup
Eggs - 4
Vanilla - 2 tbsp
Flour - 2 cups
Baking powder ~1tsp
Salt - a pinch
Zest of one lemon
Lemon glaze - 1 cup of confectionary sugar, lemon juice, enough to make liquid glaze.
Preheat the oven to 325F. Grease and flour baking dish.
In a bowl beat butter, sugar and salt until creamy, add eggs one by one, continue beating, add vanilla and lemon zest. Then gradually add sifted flour and baking powder, mix only until thoroughly blended.
Scrape the butter into a baking pan. Bake the cake until a toothpick inserted into the center comes out clean, about one hour. Let the cake cool in the pan. Take out of the pan when cooled, cover the top with lemon glaze.
